I was just watching the news and they are having a discussion about the oil companies not providing protective suits and re-breathers for clean up crews because the carcinogens and carbon particulate matter being released into air are with in “acceptable levels”. People are getting sick and they are still playing this song and dance game. When the oil spill started, they changed the environment. In case they haven’t learned from history, some people are more susceptible to changes in their surroundings than others. Remember in history class learning about when the first Europeans came to this country and brought their diseases with them? Sure, after hundreds of years of building up tolerances to them, the dormant germs in their European counterparts bodies were at “acceptable levels”. Tell that to the Native American tribes that were wiped out by small pox and other changes to their environment.

I recently was reminded of just what it means to really be someones friend. True friends are the ones who are there for you for more than a cold beer. My best friends are people that are closer to me than most of my family. These are the ones when years can go by and you don’t even talk, but you can run into them and fall back into your same routine, and know that person will still be there for you through thick and thin.

BP’s “Big Box” to stop the oil leak is only going to stem 85% of the oil flow once they get it positioned right over the main break. Wow, someone never learned you don’t try put the square peg in the circle. Really? We’re gonna drop a big box over the hole and that is gonna do it?

Moving Back and Moving On

So, I haven’t really written much recently. I just got moved into a new house and I’ve been really busy fixing up the place (painting, fixing plumbing, etc.). When I first moved back to my home town I thought it was going to be for a little while, just a blip on me getting back on my feet and figuring out what my next move was. Well, I ended up getting a new house back here. Not exactly where I thought I was going to be at almost 30, but things are good. The new house in comfortable, I have a bunch of my old friends that live close by, and I feel relaxed for the first time in a long time. Sometimes moving back home is what you need to give you a new perspective. It’s just nice to have a place that is mine and not have to deal with a landlord or someone telling you what you can and can’t do in your own home.

Part of what has really given me a new outlook is a certain old friend. While she and I might have our ups and downs I know she is always there for me. Spending time with her makes things feel right, even if she does drive me nuts sometimes. One of these days she’ll see things the same way, but until then it’s just fun spending time with her. She’s just one of those special people who doesn’t always know how special she is. Ok, enough of my manifesto of love before I start to sound like a putz.

On a side note, who in the 21st century still uses terms like Hello Love? I think Keith Richards can still get away with it, but that’s about it. Unless you are an old British rock star or a porn star from the 70′s I think there is a generational ban on the term. For some reason I hear the worm from Labyrinth in my head every time I read it. Better get off my soap box before I piss someone off.

West Florida Jambalaya

I got this recipe from an ex-girl friend a LONG time ago and I’ve played with it a little bit over the years. Thanks Jamie.

Ingredients:

* 6 slices bacon, cut into 1 inch pieces
* 1 garlic clove, finely chopped.
* 1 cup chopped celery
* 1 green bell pepper, seeded and chopped
* 1 onion, finely chopped
* 1/2 pound cubed cooked ham
* 1/2 pound cubed cooked chicken
* 1/2 pound cubed smoked sausage
* 1 (14.5 ounce) can crushed tomatoes, with liquid
* 1 (14.5 ounce) can diced tomatoes, with liquid
* 2 cups beef broth
* 2 cups chicken broth
* 1 teaspoon fresh thyme
* 2 teaspoons Cajun seasoning ( I make my own; or they sell it in the stores)
* 2 cups uncooked white rice
* 1/2 pound salad shrimp

Directions:

1. Heat a large pot over medium-high heat. Cook bacon until crisp. Remove bacon pieces with a spoon, set aside. Add celery, bell pepper, onion, and garlic to the bacon drippings, cook until onion is translucent.

2. Add the ham, chicken and sausage to the pot, pour in the tomatoes, beef broth and chicken broth. Season with thyme and Cajun seasoning. Bring to a boil, add the rice.

3. Bring to a boil, then turn the heat to low, cover, and simmer for 20 minutes, or until the rice is tender.

4. Add uncooked shrimp and bacon and cook for about 5 minutes before serving. You can use bigger shrimp if you want, just increase cooking time as appropriate.
